Sublimation ist die Trocknung im gefrorenen Zustand: bei dem Prozess werden die Johannisbeeren erstmal tiefgefroren, anschlieend wird ihnen in einer Vakuumkammer schonend das Wasser entzogen. Dieses geht direkt von Eis zu Dampf ber.

Im Vergleich zu vielen anderen Trocknungsverfahren, bleiben durch die Gefriertrocknung die meisten Nährstoffe und die typische Struktur der Johannisbeeren erhalten. Auch die Farbe bleibt durch das Gefriertrocknen sehr intensiv.
Gefriergetrocknete Früchte schmecken knusprig und aromatisch und eignen sich besonders gut als knuspriges Topping über dem Dessert, Kuchen oder Müsli. Sie eignen sich aber auch sehr gut zum natürlichen Einfärben von Cremes oder im Smoothie.

Get yourself to the Basement!

This book is for this season for sure. It was so personable, practical, and profound. I felt as though we were having a conversation with Tim and considered myself a virtual podcast audience member reading it.
